Tea time









 A tray of chouquettes & a banana smoothie 
to give a little a bit of joy to a rainy day !


CHOUQUETTES

makes about 30 chouquettes

1/4 L water
75g butter
1 teaspoon sugar (I doubled it)
1/2 teaspoon salt
150g flour
4 eggs
pearl sugar

Preheat your oven to 180 C

Put the water, butter, sugar and salt into a large saucepan and bring to boil. As soon as it starts to boil, turn off the heat, add all the flour and stir vigorously. Take the pan off the heat and add in the eggs one by one, stiring well between each egg until they are completely incorporated. 
The dough should look slimy !
Form balls on a tray covered with baking paper. I like using 2 small/medium sized spoons and having uneven scruffy puffs. Sprinkle with pearl sugar then with slightly wet fingers so as not to stick to the dough, tuck all the extra sugar on the sheet under the puffs. That bottom sugar will caramelize nicely in the oven.

Bake for around 20 minutes.

BANANA SMOOTHIE

serves 1

1 banana
1 teaspoon honey ( I like acacia honey)
2 tablespoons apple juice
125 ml natural yogurt ( I like to use half yogurt & half vanilla soya milk)

Put all the ingredients in a food processor and liquidize until smooth and frothy.

Serve immediately.
